Cookies and Milk

It can be hard to find a healthy snack, especially when you are pregnant and/or breastfeeding. Lactation Cookies are full of whole grains, brain-building walnuts, and brewer’s yeast which is high in B vitamins (all good for making breastmilk)! And, no worries, breastmilk is not one of the ingredients! 😊

Recipe for Lactation Cookies

Makes 3 dozen

Ingredients

2 c. all-purpose flour

4-6 T. brewer’s yeast

1 t. kosher salt

1 t. cinnamon

1 t. baking soda

2 T. flaxseed meal

4 T. water

1 c. unsalted butter

¾ c. brown sugar

¾ c. white sugar

2 eggs

1 t. vanilla extract

3 c. old fashioned oats

1 ½ c. semi sweet chocolate chips

½ c. chopped walnuts

Instructions

1.     Preheat oven to 350.

2.     Mix flaxseed meal and water, set aside for 3-5 minutes. Sift together flour, brewer’s yeast, salt, cinnamon and baking soda.

3.     In a large mixing bowl, cream together butter and sugars. Add eggs one at a time, mix well. Stir flaxseed mixture and add with vanilla to the butter mix. Beat until blended.

4.     Sift together dry ingredients except oats, chocolate chips and walnuts. Add to butter mixture. Stir in oats, chocolate chips, and walnuts.

5.     Using a large cookie scoop, drop onto baking sheet. Place in refrigerator for at least 1 hour or even overnight.

6.     Bake at 350 F. for 12-15 minutes. Allow to cool slightly. You can also freeze balls and bake just a couple of cookies each day, increasing baking time a few minutes more.
